Scott and I had Fajitas on Friday night. I got this recipe from a friend of mine from T&U, Leslie. I hope that you try it out and enjoy! Let me know if you do.
Leslie says that she uses skirt steak, but that if she can't find it, she uses flank steak. Both of these are kind of expensive, but we have found that London Broil is much less expensive and works perfectly well if you cut it into small strips after you cook it.

Put the meat in a gallon ziploc bag with the following marinade overnight:

World Harbors Mexican Style Fajita Sauces & Marinade (at least half a bottle)
1 Lime, cut in half, squeeze the juice out and then throw the rind in there
Several drops a soy sauce (at least a good splash or two)
Some Orange Juice (maybe 1-2 tablespoons)
A couple of drops of liquid smoke
Grill the meat.
Slice up peppers and onions thinly and cook them on the stove over medium heat with olive oil.
Serve with flour tortillas, shredded cheese, and guacamole (we never use guacamole, but this is what Leslie suggested).

I recently discovered from one of my neighbors that Kroger sells a frozen 3 pepper and onion blend, which is usually on sale 4 for $5. This is a lot cheaper than paying for a green bell pepper, red bell pepper and an onion! I ususlly use two bags because they cook down and there is enough meat to go with two bags. Church Membership

Sunday night, Scott and I and joined Christ Church of Metro Atlanta along with about 60 other founding members. We had a nice dinner and several people gave testimonies. It was a really great night. I know that our elders worked hard to plan the event an we appreciate it. Pictures from the night are in a slide show on the left.

Visiting Friends

Saturday Scott and I visited with our friends Eric and Kari. Eric and Kari have recently had their first child, Evan. He is just so cute! It was fun to hang out with Eric and Kari and I got to hold Evan a lot! He is a very good and content baby. The picture above is one of Evan when Kari was trying to wake him up so that she could feed him. She would tickle his lips and he would pucker them out like that. Too cute!

Great Picture

This is my favorite picture ever. It is a picture of my parents taken after they were married but before my sister was born. So, that would be ca. 1972-1973. They were just so young here. I think that this is my sister's favorite picture too.

Easy Cheesy Chicken Chili


2 Cans Great American Beans (Kroger brand is ok)
1 Can chicken broth
1 large can chicken breast (drain)
1 jar medium salsa
2 cups shredded sharp cheddar cheese

Dump everything – except cheese into a large pot
Simmer for as long as you like
Right before you serve – add cheese – stir until it melts

Freezes well – but, if you make it to freeze – leave out the cheese
Add when you thaw and re-heat

Sherri at work gave me this recipe. She calls it Easy Chicken Chili, but I am renaming it to Easy Cheesy Chicken Chili because it is really cheesy. It is super good...and it really is easy. I just threw the ingredients in our crock pot on low while I was cooking our lunch and let it sit all day until we were ready to eat. Then, because it makes so much, I spooned half of it into a container to freeze before I added 1 cup of cheese to the half still in the crock pot. We ate it with Fritos, but you don't have to have anything else to eat with this chili. Just FYI, I had never heard of "Great American Beans", but they looked like Navy Beans to me, so that is what I bought.

Today has been a really good Sunday. Zach preached today at church. The sermon was over James 4:13-17. He reminded us that God is completely in control of our lives. Self confidence is not something that we should have - we need to realize that while we should be working hard and we should make plans, we need to go into it recognizing that things will turn out the way God plans it, not the way we plan it. Isn't that awesome? I love knowing that God is sovereign over my life. He never makes a mistake. He is never surprised about anything. Wow!

It has really started to get chilly outside at nights and in the mornings. All the leaves are changing and various cities and churches are having their fall festivals. There are pumpkins for sale on every corner and at every church in between. It really feels like Fall now.

We had our annual chili cook-off at Pike on this past Wed. I tried several chilis that I like a lot, but my favorite was made by a lady named Sherri that I work with who sits close to me. I will post the recipe in my next post. I made that chili for Scott and I today and Scott really loved it too.

It did warm up this afternoon and the cats were enjoying the sun shining in through the living room window. Here are some very adorable pictures of them.

This is Sampson's new favorite place to be when we are in the office and let him in as well...under Scott's desk. He will lay under there whether your feet are under there or not. Sometimes he will sniff your toes or leg and it tickles really bad! He is laying under Scott's desk right now, with his chin resting on his little paw.

SCHS Class of 1997 10 Year Reunion

Last night was my 10 year reunion. Most people looked the same as they had when we were in high school. There was one girl that I didn't recognize at all...I mean, it wasn't like I couldn't remember her name, I couldn't tell that I had ever met her before. But, I think she had had elective surgery to look the way she did. But, that's a different story.

One of my favorite high school teachers, Mr. Spier, who taught us AP English was there with his wife, who taught at Walton and had tutored me in AP Calculus. It was great to see them. A couple that Lisa and I were friends with in college, Trey and Jennifer (Simmons) Lyon were there. The organizers worked very hard to make it a fun night and they succeeded. It was nice to go and talk to people that I haven't seen in years and the ones I stay in touch with like Lisa and Lee and Robyn and Michael. I was sad that our friend Cristal, who is in the Air Force, working in Korea, wasn't there, but I am excited to know she will be home soon.

Welcome to the World, Evan!

Our friends Eric and Kari, whose shower we recently attended, just had their baby! Evan Douglas Moore was born at 3:14 pm on Wednesday, October 10! He's a real cutie! Eric and Kari are home and have sent pictures. I thought I would share this one with all of you. I mean, who gets tired of looking at babies? Especially cute babies like Evan! Congratulations Eric and Kari, and welcome to the world, Evan.

Can you believe our weather? I can't believe how cold it has gotten. I knew it was coming, but I am not prepared for it. I had to pull the comforter up over myself last night. The upside is that I do love the colors of fall. I love the leaves changing on the tree and the decorations that people put out. Happy Fall!

Anyway, Scott has been out of town all week and he comes home tonight! I am SO excited for him to come home. (Obviously I wasn't going to post that he was gone all over our blog in case some crazy was reading).

Happy Birthday Melanie!

Scott's mom's birthday was Friday, October 5. After we visited Meme, we went to Tracy's house (Scott's sister) to celebrate her birthday. We had flying saucers and Tracy and SaraBeth had made an angelfood cake, which we had covered in strawberries and coolwhip. It was all very good. We gave Melanie her gifts, and played with SaraBeth and Sam. Scott, Robert, and I checked out Robert's XBox 360. Sam has grown up so fast and he is talking pretty well and walking. He also LOVES to have his picture taken. If he sees you with a camera he smiles really big and then squeals "Whoa!" after the flash goes off. So, I got a ton of cute pictures of Sam. SaraBeth is so grown up and she is such a sweet big sister. She really loves Sam and it shows. I know that Robert and Tracy feel blessed to have such sweet children. I think that the funniest part about the whole night was that I learned that Scott and Tracy's parents like to play Wii. SaraBeth was also taking advantage of having her great grandmother there and played with her a good bit. It was a good family get-together. I couldn't choose which pictures to post, so I just did a slide show.


Yesterday Scott and I went to visit Meme at the nursing home in Dallas. She looked and sounded better yesterday than she did the last time we saw her, but she was still not the same. Her hand was really hurting her because of arthritis. She is spending a lot more time in bed. Meme still needs all of our prayers.

Happy Birthday Callie!

Thursday, October 4 was Callie's birthday. Our ladies' Bible study group got together on Friday night to celebrate the occassion. We had a lot of fun. Lauren made tacos and I made frozen limeaid. Lauren also made brownies for the birthday celebration part of our gathering. We also had a "clothing exchange" which we do any time any of us cleans out our closet. We offer up our old clothes to each other before we take them to goodwill.

I just love all the ladies in our Bible study. It's great to have girlfriends and mine are such a blessing!

You know what they say, "girls just wanna have fun!" We can be silly with the best of them! Caitlin found this mask at the dollar store and couldn't resist surprising each of us as we got to Lauren's with it. It was pretty funny to see everyone's reaction. Then, when we were taking pictures, it was decided (I'm not sure how we decided this) that we should take some pictures with the mask. These are pretty stinking funny if I do say so myself!
